The Recipe Begins in Scotland

The story starts in Scotland, where the original owner's father grew up in the hard years following the Great Depression and through the rationing of World War II. Sweet treats were rare, but one family tradition endured: homemade Scottish tablet.

Dense, grainy, and deeply caramelized, tablet was made from simple ingredients and shared on special occasions. The recipe was eventually written down by hand, then tucked away as the family crossed the Atlantic and built a life in America.

From Scottish Tablet to American Fudge

Years later, his son Marty dreamed of starting a fudge business. The family found that faded handwritten recipe and began experimenting—softening the traditional tablet texture while preserving its rich brown-sugar character. From those trials came Original Penuche, the recipe that would become the foundation of The Mill Fudge Factory.

When Marty returned to Britain, he passed what he had learned to his stepbrother Noah. Noah kept refining the recipes, deliberately making the fudge less sweet and replacing corn syrup with honey. The standard became clear: all-natural ingredients, with no artificial flavors, colors, or preservatives.

2006–2025

Twenty Years at The Mill

The Mill Fudge Factory opened in 2006 inside a historic 18th-century grist mill in Bristol, New Hampshire. Each batch was cooked in small quantities, stirred by hand, cut by hand, and packed with the kind of care the old recipe deserved.

Some flavors came quickly. Others demanded patience. Scottish Whisky Fudge took nearly a year to perfect and was made with Johnnie Walker Red Label—a tribute to the family's roots and to the clan motto, ‘Dulce Periculum’: Danger is Sweet.

Over the years, that little mill kitchen earned national recognition, including Top 5 in America from Paula Deen Magazine and Top 3 from MSN.com. More importantly, it earned generations of loyal customers who could taste the difference.

2025–Today

The Next Chapter in Norton

In 2025, Mark Hesselbarth and his family took responsibility for the next chapter. They made a straightforward promise: preserve the recipes, protect the all-natural ingredient standards, and keep the small-batch process at the heart of every box.

Today, The Mill Fudge Factory makes and ships its fudge from Norton, Massachusetts. New and seasonal ideas continue to join the case, but the principles have not changed. Every batch connects a Scottish family recipe, two decades of New England craftsmanship, and a family determined to carry both forward.
